There’s nothing better than a hearty meal to comfort you on a cold winter’s day. If these meals aren’t adding those unwanted calories and are supremely delicious, who wouldn’t want to add them in their daily meals? So, let’s swap some oh-so-heavy meals with fresh and crunchy greens to satiate your taste buds with a colourful, flavourful and ultra-nutritious food option.
Southwest Potato Salad
Servings: 2
- 200 g Baby Potatoes, boiled (with skin)
- 1 tsp Olive Oil
- 2-3 Garlic Cloves, chopped
- 60 g Sweet Corn Kernels
- ½ tsp Red Chili Powder
- Salt
- 75 g FunFoods Zer0Fat Dressing South West
- 5-6 Parsley Leaves, chopped
Directions:
- Gently press the potatoes, using your hands and keep them aside.
- Heat oil in a non-stick pan (medium flame). Add garlic and lightly fry for 10 seconds or until garlic turns light brown.
- Add potatoes, sweet corn kernels and red chili powder. Sauté vegetables for 2-3 minutes and season it with salt.
- Take out vegetables in a bowl, add South West dressing and parsley. Mix well and serve warm.
