Cooking Oil – Why Smoke Point Matters for Better Nutrition. By respecting the smoke point of cooking oils, avoiding repeated reheating, and enjoying home-cooked meals more often, families can protect their heart, maintain better metabolic health, and enjoy delicious food with greater confidence.

Cooking healthy is not just about choosing fresh vegetables or reducing sugar and salt. One of the most overlooked aspects of healthy eating is the type of cooking oil we use and how we use it. Every day, Indian kitchens witness a variety of cooking methods—from tempering spices and stir-frying vegetables to deep-frying snacks and slow-cooking curries. The oil used in these preparations plays a major role in determining the nutritional quality of our meals.

What Is the Smoke Point?
The smoke point is the temperature at which cooking oil begins to smoke and break down. Once this happens, the oil loses many of its beneficial nutrients and starts producing harmful substances such as free radicals and aldehydes. These compounds may contribute to inflammation, oxidative stress, and an increased risk of chronic diseases when consumed regularly.
Since Indian cooking often involves high temperatures, selecting an oil with an appropriate smoke point is just as important as choosing healthy ingredients.

Traditional Indian Oils Have Their Strengths
India has a rich tradition of using different oils depending on the region and cuisine. Rather than relying on a single oil, many households use a variety of oils throughout the week, which provides a wider range of healthy fats and nutrients.
Ghee remains a favourite in Indian kitchens because of its high smoke point of around 250°C. It is ideal for tempering, roasting, and everyday cooking while enhancing flavour. In moderation, ghee also helps in the absorption of fat-soluble vitamins and supports digestion.
Mustard oil, widely used in North and East India, is known for its distinctive aroma and heart-friendly monounsaturated fats. It also contains alpha-linolenic acid (ALA), a plant-based omega-3 fatty acid. Its relatively high smoke point makes it suitable for frying, curries, and pickles.
Groundnut oil, commonly used in western India, is another excellent option for high-temperature cooking. With a smoke point of about 230°C, it remains stable during frying and sautéing, making it suitable for everyday meals.
Coconut oil is a traditional cooking medium in southern India. Virgin coconut oil is best suited for medium-heat cooking, while refined coconut oil performs better at higher temperatures. It contains medium-chain triglycerides (MCTs), which are quickly converted into energy by the body.

Match the Oil to the Cooking Method
Choosing the right oil depends on how you cook.
• High-heat cooking: Ghee, mustard oil, groundnut oil, refined coconut oil, and palm oil.
Medium-heat cooking: Virgin coconut oil and sesame oil.
Low-heat cooking or salad dressings: Extra virgin olive oil.

Using the appropriate oil helps preserve nutrients while reducing the formation of harmful compounds.

Avoid Reusing Cooking Oil
One common unhealthy practice is repeatedly reheating oil after deep frying. Every reheating cycle increases the breakdown of the oil, producing more harmful chemicals. Reused oil has been linked to increased inflammation and cardiovascular risk. It is especially common in commercial food establishments, making frequent consumption of deep-fried outside food less healthy.

A Simple Step Towards Better Health
Healthy cooking doesn’t require expensive ingredients or complicated diets. It begins with understanding the oils we use every day. Keeping two or three different cooking oils at home and choosing them based on the cooking method can improve nutrition without changing traditional recipes.
